Tonight's Dinner - A Recipe
This was what I made for dinner tonight, modifying a recipe from a friend and everyone liked it..
Spinach Feta Chicken
Ingredients:
4 boneless skinless chicken breasts
1 bag fresh spinach (6 oz)
Fresh Thyme
1/4 bottle of any kind of balsamic vinegar and oil salad dressing
Small tub of crumbled Feta Cheese
- Preheat oven to 375.
- Drizzle salad dressing on bottom of cooking pan
- Layer fresh spinach leaves
- Put half of feta cheese on top of spinach
- Cut chicken breast in half widthwise and then lengthwise to make thin tenders/strips and place atop the spinach/cheese
- Put rest of cheese on top of chicken and rest of spinach leaves
- Drizzle salad dressing over the top
- Add some fresh thyme
Bake 1 hour. Serve with rice or potatoes. I made mine with roasted red bliss potatoes and it went well with the chicken.
